A green, slightly tart Chinese mustard tea in the Japanese Bancha style.
Green tea
If you prepare green tea in the same way as black tea, you will be bitterly disappointed because the tea usually tastes the same. For green tea to succeed, the water temperature should be 70° C. The colder the water, the better most varieties taste. Sugar and lemon are taboo among the “true” devotees, as this is the only way to bring out the best in the flavor. Flavored green teas are an alternative. For loose tea, you should only use about 2/3 of the amount you would normally use for black tea.
